Ricotta pancakes with apricots
- 320 g Ricotta
- 4 Egg
- 12 Tablespoon Lemon juice
- 4 TSP.Honey
- 160 g Buckwheat flour
- 2 TSP.Baking powder
- 4 TSP Coconut oil
- 8 Apricots
- 12 TBSP. yogurt (3,5 % fat)
- 4 stalks Mint

Preparation steps
- Blend ricotta with egg, lemon juice and honey until smooth. Add buckwheat flour and baking powder and mix until thick. Heat coconut oil in a pan and add a large tablespoon of batter at a time to the pan, bake over medium heat for 1 minute, flip and continue baking from the other side. Proceed in this manner for about 5 pancakes.
- Meanwhile, wash apricots, cut in half and into wedges. Mix yogurt until creamy. Wash mint, shake dry and pluck off leaves. Stack the pancakes on a plate, add the yogurt and apricot slices and serve garnished with mint.
How healthy are the main ingredients?
Ricotta: This fresh cheese made from lean whey is one of the gratifyingly low-fat and low-calorie types of cheese and is, therefore, a good choice for people with elevated blood fat levels. Because ricotta is made from whey, people with sensitive stomachs and intestines usually tolerate it very well. However, if you are lactose intolerant, ricotta should be consumed with caution, as its lactose content can vary between 1-5 grams per 100 grams.
